Ingredients
Mutton & Marinades
- 500 gm Mutton bone-in or boneless, cut into 2-inch pieces
- 4 tbsp Lemon Juice
- 3 tbsp Ginger-Garlic Paste
- 1 tbsp Chili Paste adjust to taste, green
- 1 tsp Salt or to taste
- 1 tsp Pepper Powder black
Spices & Aromatics
- 2 tbsp Oil vegetable or canola
- 2 tbsp Ghee clarified butter
- 1 medium Onion sliced for frying
- 1 tbsp Onion Paste
- 1 tsp Cumin Seeds jeera
- 2 Cardamom black, lightly crushed
- 1 stick Cinnamon
- 2 Cardamom elaichi, lightly crushed
- 4 Cloves
- 7 Peppercorns black
- 1/2 Mace optional
- 2 tsp Chili Powder adjust to taste, red
- 1 tsp Turmeric Powder haldi
- 1 tbsp Coriander Powder dhania
Instructions
Prepare the Mutton
- Wash the mutton thoroughly and pat dry with a clean cloth. In a bowl, combine the mutton with lemon juice, ginger-garlic paste, green chili paste, salt, and black pepper powder. Mix well to coat the mutton evenly and marinate for at least 30 minutes, or preferably longer in the refrigerator.
Sauté Aromatics
- Heat ghee in a heavy-bottomed pan or pot over medium heat. Add the sliced onions and sauté until golden brown. Remove the fried onions and set aside.
- Heat oil in the same pan. Add cumin seeds, black cardamom, cinnamon, cloves, peppercorns, and mace (if using). Sauté for a minute until fragrant. Add ginger-garlic paste and onion paste, and sauté until lightly browned.
Cook the Mutton
- Add the red chili powder, turmeric powder, and coriander powder to the pan. Saute for about 5 minutes until fragrant. Add the marinated mutton and mix well to coat with the spices. Add the whisked yogurt and the fried onions. Cook, stirring occasionally, until the oil starts to separate from the gravy.
Simmer and Serve
- Add water as needed to achieve your desired consistency. Reduce heat to low, cover, and simmer until the mutton is tender and cooked through (approximately 1-1.5 hours, depending on the cut of mutton). Garnish with fresh coriander leaves and serve hot with rice, naan, or roti.
