Ingredients
 

Dry Ingredients

  • 1 cup Semolina rava
  • 3/4 cup Sugar granulated
  • 3 pod Cardamom green cardamom pods, or 1 teaspoon cardamom powder

Wet Ingredients

  • 1/4 cup Ghee you can substitute with unsalted butter, but desi ghee gives a richer flavor.
  • 1/2 cup Cashews chopped; you can also add raisins or other nuts as desired.

Instructions
 

Prepare the Semolina

  • Dry roast the semolina (rava) in a heavy-bottomed pan over medium heat until fragrant and lightly golden. Stir frequently to prevent burning. Remove from heat and let it cool completely.

Prepare the Sugar Mixture

  • In a small bowl, finely powder the sugar. If using whole cardamom pods, grind them into a fine powder. Combine the powdered sugar and cardamom powder.

Toast the Nuts

  • Heat a tablespoon of ghee in a separate pan. Add the chopped cashews (and raisins, if using) and sauté until lightly golden brown and fragrant. Set aside.

Combine and Shape the Laddus

  • In a large bowl, combine the cooled roasted semolina, powdered sugar-cardamom mixture, and the remaining ghee. Mix well until the mixture comes together and becomes slightly sticky.
  • Add the sautéed cashews (and raisins). Mix gently to combine evenly.
  • Shape the mixture into small, round laddus using your hands. You can lightly grease your hands with ghee to prevent sticking.

Cool and Serve

  • Place the prepared laddus on a plate lined with parchment paper or a serving dish. Let them cool completely before serving. Store in an airtight container at room temperature for up to a week.
