Prepare the Drumsticks

  • Boil the chopped drumsticks with water and salt until tender but not mushy. Set aside.

Make the Spice Paste

  • Heat oil in a pan. Add poppy seeds and sauté until they lightly splutter.
  • Add coriander seeds, red chilies, and green chilies. Sauté until fragrant.
  • Add the chopped onion and sauté until softened. Stir in the turmeric powder and grated coconut. Sauté briefly. Add curry leaves and mix well.
  • Remove from heat and let the mixture cool. Blend into a smooth paste using a food processor or blender.

Temper the Curry

  • Heat oil in a fresh pan. Add mustard seeds and asafoetida. Once the mustard seeds splutter, add curry leaves and sauté briefly.
  • Add the chopped onion and sauté until softened.
  • Add the chopped tomatoes and sauté until softened.

Combine and Simmer

  • Add the boiled drumsticks to the pan. Pour in the prepared spice paste.
  • Stir in the salt and jaggery. Add more water if needed to achieve desired consistency. Simmer for 10-15 minutes, allowing the flavors to meld.
  • Garnish with fresh coriander leaves before serving.

Serve

  • Serve hot with steamed rice, roti, dosa, or chapathi.
