Ingredients
Drumsticks & Vegetables
- 1 lb Chicken Drumsticks fresh, peeled and chopped into 1-inch pieces
- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 2 Chili Pepper finely chopped (adjust to taste), green
Spices & Aromatics
- 1 tbsp Poppy Seeds
- 1 tbsp Coriander Seeds
- 3 Chili Pepper adjust to taste, dried, red
- 2 sprigs Curry Leaves
- 1/4 tsp Asafoetida hing
- 1/4 tsp Mustard Seeds
- 1/4 tsp Turmeric Powder
- Salt to taste
- 1 tbsp Jaggery or brown sugar
Other Ingredients
- 3 tbsp Cooking Oil coconut oil preferred
- 1 cup Coconut freshly grated
- Few Coriander for garnish
Instructions
Prepare the Drumsticks
- Boil the chopped drumsticks with water and salt until tender but not mushy. Set aside.
Make the Spice Paste
- Heat oil in a pan. Add poppy seeds and sauté until they lightly splutter.
- Add coriander seeds, red chilies, and green chilies. Sauté until fragrant.
- Add the chopped onion and sauté until softened. Stir in the turmeric powder and grated coconut. Sauté briefly. Add curry leaves and mix well.
- Remove from heat and let the mixture cool. Blend into a smooth paste using a food processor or blender.
Temper the Curry
- Heat oil in a fresh pan. Add mustard seeds and asafoetida. Once the mustard seeds splutter, add curry leaves and sauté briefly.
- Add the chopped onion and sauté until softened.
- Add the chopped tomatoes and sauté until softened.
Combine and Simmer
- Add the boiled drumsticks to the pan. Pour in the prepared spice paste.
- Stir in the salt and jaggery. Add more water if needed to achieve desired consistency. Simmer for 10-15 minutes, allowing the flavors to meld.
- Garnish with fresh coriander leaves before serving.
Serve
- Serve hot with steamed rice, roti, dosa, or chapathi.
