Ingredients
For the Cupcakes
- 2 tbsp Yogurt greek yogurt preferred, thick
- 2 tbsp Sugar granulated
- 1 tbsp Vegetable Oil
- 1/2 tsp Vanilla Extract
- 1 1/2 cup All-Purpose Flour
- 1 tsp Corn Flour
- 1/4 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 tsp Espresso Powder instant
- 1 tbsp Water
For the Mocha Cream Cheese Icing
- 40 grams Butter softened, unsalted
- 1 cup Sugar powdered
- 1 cup Cream Cheese softened
- 1/2 tsp Vanilla Extract
- 1/2 tsp Strong Brewed Coffee cooled
For the Filling
- 2 tbsp Semi-Sweet Chocolate finely chopped
- 2 tbsp Simple Syrup Or Strong Coffee
- 1/4 cup Cocoa Powder for dusting
Instructions
Prepare the Espresso
- Dissolve instant espresso powder in hot water and set aside.
Make the Cupcake Batter
- In a mixing bowl, beat together the yogurt, sugar, and oil until creamy. Add the dissolved espresso and vanilla extract; mix well.
Combine Dry Ingredients
- In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Gently fold the dry ingredients into the wet ingredients until just combined.
Bake the Cupcakes
- Fill cupcake liners about 2/3 full. Bake at 350°F (180°C) for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Make the Mocha Cream Cheese Icing
- In a mixing bowl, beat together the softened butter and powdered sugar until light and fluffy. Beat in the softened cream cheese, vanilla extract, and cooled coffee until smooth and creamy.
Make the Chocolate Ganache (Optional)
- Melt the chopped chocolate in a double boiler or microwave in 30-second intervals, stirring until smooth. Stir in the simple syrup or coffee until combined.
Assemble the Cupcakes
- Once the cupcakes have completely cooled, carefully scoop out a small amount of the center of each cupcake using a melon baller or small spoon. Fill the center with the chocolate ganache (if using). Pipe or spread the mocha cream cheese icing on top of the cupcakes. Dust with cocoa powder.
Chill and Serve
- Refrigerate for at least 30 minutes to allow the icing to set before serving.
