  • Combine hot water, espresso powder, instant coffee powder, and sugar in a bowl. Stir until the sugar dissolves and set aside for 10 minutes to cool.

Whip the Cream

  • In a chilled bowl, beat the chilled heavy cream with an electric mixer until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.

Prepare the Mascarpone Mixture

  • Add cold mascarpone cheese to the whipped cream in batches, beating on low-medium speed until light and fluffy and no lumps remain. Stir in the vanilla extract and salt.

Combine Coffee and Cream

  • Strain the coffee mixture to remove any grounds. Gently fold the cooled coffee mixture into the mascarpone cream until just combined.

Assemble the Tiramisu

  • In a glass or square dish, dip ladyfingers briefly into the coffee mixture (don't over-soak!), and arrange them in a single layer at the bottom of the dish.
