- 1/2 cup Water alternatively, use 2 hot cups of strongly brewed coffee
- 3 tbsp Espresso Powder instant
- 1 tbsp Coffee Powder instant
- 3 tbsp Sugar granulated
For the Mascarpone Cream
- 250 grams Mascarpone Cheese cold
- 200 grams Heavy Whipping Cream chilled
- 1 tsp Vanilla Extract
- 1 tsp Salt or to taste
For Assembly
- 15 Ladyfinger Biscuits or savoiardi biscuits
- 2 tbsp Cocoa Powder for dusting
Instructions
Prepare the Coffee Mixture
- Combine hot water, espresso powder, instant coffee powder, and sugar in a bowl. Stir until the sugar dissolves and set aside for 10 minutes to cool.
Whip the Cream
- In a chilled bowl, beat the chilled heavy cream with an electric mixer until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.
Prepare the Mascarpone Mixture
- Add cold mascarpone cheese to the whipped cream in batches, beating on low-medium speed until light and fluffy and no lumps remain. Stir in the vanilla extract and salt.
Combine Coffee and Cream
- Strain the coffee mixture to remove any grounds. Gently fold the cooled coffee mixture into the mascarpone cream until just combined.
Assemble the Tiramisu
- In a glass or square dish, dip ladyfingers briefly into the coffee mixture (don't over-soak!), and arrange them in a single layer at the bottom of the dish.
Layer the Cream
- Sift cocoa powder evenly over the ladyfingers. Spread half of the mascarpone cream over the biscuits.
Repeat Layers
- Repeat the process with another layer of dipped ladyfingers and top with the remaining mascarpone cream.
Dust and Chill
