Ingredients

- 5 tbsp Cocoa Powder high quality recommended, unsweetened
- 2 tbsp Cornstarch also known as cornflour
- 2 tbsp Custard Powder
For the Gelatin and Setting
For the Finishing Touches
- 1 can (14 oz) Sweetened Milk condensed
- 200 ml Heavy Cream chilled, whipping cream
- 1/2 tsp Vanilla Extract pure vanilla extract
- Optional Garnish berries, chocolate shavings, or whipped cream
Instructions
Prepare the Gelatin
- Bloom the gelatin by sprinkling it over 1 cup of cold water in a small bowl. Let it sit for 15 minutes to soften.
Combine Dry Ingredients
- Whisk together the cocoa powder, cornstarch, and custard powder in 1/2 cup of milk until smooth. Set aside.
Make the Chocolate Base
- In a saucepan, combine the remaining 1 1/2 cups of milk and the sugar. Heat over medium heat, stirring until the sugar dissolves. Add the cocoa mixture and whisk continuously until the mixture thickens to a pudding-like consistency. Remove from heat.
Dissolve the Gelatin
- Gently heat the bloomed gelatin in a small saucepan over low heat, stirring constantly, until completely dissolved and slightly thickened (about 3-5 minutes). Do not boil.
Combine and Chill
- Pour the dissolved gelatin into the chocolate mixture, stirring well to combine. Stir in the condensed milk, heavy cream, and vanilla extract until fully incorporated.
Set the Mousse
- Immediately pour the mousse into individual serving glasses or a large serving bowl. Cover and refrigerate for at least 1 hour, or until set.
Garnish and Serve
- Garnish with chocolate shavings, fresh berries, or whipped cream before serving. Enjoy!
