Ingredients
 

For the Chocolate Mixture

  • 2 cup Milk
  • 1/2 cup Milk for combining cocoa and cornstarch
  • 1/4 cup Sugar can adjust to taste, granulated sugar
  • 5 tbsp Cocoa Powder high quality recommended, unsweetened
  • 2 tbsp Cornstarch also known as cornflour
  • 2 tbsp Custard Powder

For the Gelatin and Setting

  • 10 gm Gelatin bloom strength 200, powdered gelatin
  • 1 cup Water cold water, for blooming gelatin

Prepare the Gelatin

  • Bloom the gelatin by sprinkling it over 1 cup of cold water in a small bowl. Let it sit for 15 minutes to soften.

Combine Dry Ingredients

  • Whisk together the cocoa powder, cornstarch, and custard powder in 1/2 cup of milk until smooth. Set aside.

Make the Chocolate Base

  • In a saucepan, combine the remaining 1 1/2 cups of milk and the sugar. Heat over medium heat, stirring until the sugar dissolves. Add the cocoa mixture and whisk continuously until the mixture thickens to a pudding-like consistency. Remove from heat.

Dissolve the Gelatin

  • Gently heat the bloomed gelatin in a small saucepan over low heat, stirring constantly, until completely dissolved and slightly thickened (about 3-5 minutes). Do not boil.

Combine and Chill

  • Pour the dissolved gelatin into the chocolate mixture, stirring well to combine. Stir in the condensed milk, heavy cream, and vanilla extract until fully incorporated.

Set the Mousse

  • Immediately pour the mousse into individual serving glasses or a large serving bowl. Cover and refrigerate for at least 1 hour, or until set.
