  • Boil the milk in a heavy-bottomed pot until it comes to a rolling boil. In a separate bowl, mix the lemon juice with 1/4 cup of warm water.

Curdle the Milk

  • Slowly pour the lemon juice mixture into the boiling milk, stirring gently. The milk will begin to curdle. Once the fat separates and the whey is clear, remove the pan from the heat.

Drain and Press the Paneer

  • Gently pour the curdled milk into a muslin cloth or cheesecloth lined colander. Rinse the paneer with cold water to remove any excess whey. Gather the cloth and squeeze out excess moisture. Place the wrapped paneer under a heavy weight (like a pan filled with water) for at least 1 hour to press out as much moisture as possible.

Make the Sandesh Mixture

  • Carefully unwrap the paneer and mash it thoroughly with a fork or potato masher. Add the sugar and cocoa powder and knead well to form a smooth, pliable dough. Place the dough in a saucepan and cook over low heat for 6-7 minutes, stirring continuously, until it becomes non-sticky.

Shape and Cool

  • Remove the paneer mixture from the heat and allow it to cool completely. Once cooled, shape the mixture into small, round balls (approximately 1 inch in diameter).

Prepare the Chocolate Ganache

  • In a double boiler or heat-safe bowl set over a pan of simmering water, combine the white chocolate, butter, and heavy cream. Stir gently until the chocolate is completely melted and the mixture is smooth and syrupy.

Finish and Serve

  • Drizzle or pipe the chocolate ganache over the cooled Sandesh balls. Allow the ganache to set slightly before serving. Enjoy!
