Instructions

  • In a large pot, bring the milk to a rolling boil over medium-high heat. This creates the base for our fresh paneer.

  • Reduce the heat to low and slowly add the lemon juice, stirring continuously. The milk will begin to curdle. This process separates the curds (paneer) from the whey.
  • Once the milk has fully curdled, drain the mixture through a cheesecloth-lined colander. Rinse the paneer under cold water to remove any residual lemon flavor. This step ensures a clean, milky taste.
  • Gather the cheesecloth and hang the paneer for about 1 hour to remove excess whey. This allows the paneer to firm up slightly, making it easier to handle.
  • In a non-stick pan, crumble the paneer and cook over low heat for 2-3 minutes, stirring constantly. This gentle heating process removes any remaining moisture and creates a smooth texture.
  • Remove the pan from the heat and let the paneer cool completely. Once cooled, add the sugar and saffron strands. Mix thoroughly until well combined.
  • Take a portion of the paneer mixture in your hand and flatten it slightly. Place a mango slice on top and gently wrap the paneer around it, forming a small oval or round shape.
  • Arrange the prepared sandesh on a plate and refrigerate for at least 30 minutes before serving. Chilling allows the flavors to meld and the sandesh to firm up.

Recipe Notes

Good To Know

  • For extra smoothness, knead the freshly prepared paneer (chhena) for 5-7 minutes until it feels silky and pliable before mixing in the mango pulp.
  • If you prefer a more pronounced mango flavor, swirl in small mango chunks or a layer of thick mango purée on top before chilling, then garnish with chopped pistachios for color and crunch.
  • To shape Sandesh elegantly for special occasions, use silicone molds or lightly greased cookie cutters. Chill the Sandesh in the molds for an hour, then gently unmold and serve with a saffron strand or edible silver leaf (varak) for a festive touch.

Expert Tips

  • Adjust the sweetness according to the sweetness of your mangoes. If using very ripe mangoes, you may need less sugar or sweetener.
  • For a creamier texture, blend a portion of the mango pulp before adding it to the paneer. This will create a smoother, more decadent Sandesh.
  • Experiment with different flavor combinations! Cardamom, saffron, or a touch of rose water can complement the mango beautifully.

Storage Instructions

  • Store Mango Sandesh in an airtight container in the refrigerator for up to 2 days. For best texture and flavor, enjoy it chilled and within 24 hours, as the freshness of mango and paneer is key to its appeal.
