Ingredients
For the Paneer (if making homemade):
- 1 ltr Milk
- 2 tbsp Lemon Juice or white vinegar
For the Sandesh:
- 250 gm Cottage Cheese homemade or store-bought, drained well
- 100 gm Sugar Powder
- 2 tbsp All-Purpose Flour refined
- 50 gm Sesame Seeds white sesame seeds are preferred
- 2 tbsp Cocoa Powder unsweetened
- 1 tsp Vanilla Extract
Instructions
Prepare the Paneer (If Making Homemade)
- Boil the milk in a heavy-bottomed pan. Once boiling, reduce heat to low and simmer for 15-20 minutes, stirring occasionally to prevent scorching.
- Add lemon juice (or vinegar) and stir gently. The milk will curdle. Let it stand for a few minutes.
- Gently separate the curds (paneer) from the whey using a cheesecloth or fine-mesh sieve. Rinse the paneer under cold water and squeeze out excess water thoroughly.
- Set the paneer aside to drain completely.
Make the Sandesh Dough
- Combine the prepared paneer, sugar powder, and flour in a large bowl. Knead well to form a smooth and pliable dough.
Divide and Mix
- Divide the dough into two equal portions.
- Keep one portion plain (white Sandesh). Mix the cocoa powder and vanilla extract into the other portion (chocolate Sandesh).
Shape and Assemble
- Take a small portion of the white dough and flatten it into a small disc in your palm.
- Take a small portion of the chocolate dough and flatten it into a similar sized disc.
- Place the chocolate Sandesh disc on top of the white Sandesh disc. Gently press to adhere the two together.
Decorate and Serve
- Sprinkle sesame seeds evenly over the top of the Choco Sandesh.
- Serve immediately or refrigerate for later. Refrigerating will enhance the flavor and texture.
