Ingredients
Kulfi Base
- 1 cup Milk Powder
- 1 cup Heavy Cream
- 1/2 cup Sugar powdered
- 2 tablespoons Cornstarch
- 1 cup Milk use full-fat milk for best results
Chocolate Coating & Garnish
- 1/4 cup Cashews crushed
- 4 ounces Semisweet Chocolate chopped
- 1/4 cup Almonds optional, slivered or chopped
Instructions
Prepare the Kulfi Base
- Combine milk powder, heavy cream, powdered sugar, cornflour, and whole milk in a saucepan. Whisk until smooth to avoid lumps.
Cook the Mixture
- Cook over medium-low heat, stirring constantly, until the mixture thickens and comes to a gentle simmer. This should take about 10-15 minutes.
Cool and Flavor
- Remove from heat and let the mixture cool completely. Stir in the crushed cashews and optional almonds.
Freeze the Kulfi
- Pour the mixture into small kulfi molds or ramekins. Cover and freeze for at least 8 hours, or preferably overnight, until solid.
Melt the Chocolate
- Melt the chopped semisweet chocolate in a double boiler or microwave in short bursts, stirring until smooth.
Dip and Refreeze
- Carefully remove the kulfi from the molds. Dip the kulfi into the melted chocolate, ensuring it's fully coated. Place the chocolate-covered kulfi back into the molds or onto parchment paper.
Final Freeze and Serve
- Return to the freezer for at least 1 hour to allow the chocolate to set completely. Serve chilled and enjoy!
