Prepare the Kulfi Base

  • Combine milk powder, heavy cream, powdered sugar, cornflour, and whole milk in a saucepan. Whisk until smooth to avoid lumps.

Cook the Mixture

  • Cook over medium-low heat, stirring constantly, until the mixture thickens and comes to a gentle simmer. This should take about 10-15 minutes.

Cool and Flavor

  • Remove from heat and let the mixture cool completely. Stir in the crushed cashews and optional almonds.

Freeze the Kulfi

  • Pour the mixture into small kulfi molds or ramekins. Cover and freeze for at least 8 hours, or preferably overnight, until solid.

Melt the Chocolate

  • Melt the chopped semisweet chocolate in a double boiler or microwave in short bursts, stirring until smooth.

Dip and Refreeze

  • Carefully remove the kulfi from the molds. Dip the kulfi into the melted chocolate, ensuring it's fully coated. Place the chocolate-covered kulfi back into the molds or onto parchment paper.

Final Freeze and Serve

  • Return to the freezer for at least 1 hour to allow the chocolate to set completely. Serve chilled and enjoy!
