Ingredients
For the Kulfi Base:
- 1 ltr Milk whole milk is recommended for best creaminess.
- 1/2 cup Mawa also known as dried milk solids., mawa
- 1 tbsp Corn Flour helps thicken the kulfi.
- 1/2 cup Sugar adjust to your desired sweetness., powdered
- 1/4 cup Nuts chopped pistachios, almonds, and cashews recommended., mixed
- 1 tsp Vanilla Extract
Instructions
Prepare the Kulfi Base
- Bring the milk to a boil in a heavy-bottomed pan, stirring constantly to prevent sticking.
- Reduce heat to low, add the khoya, and stir until well combined and the mixture begins to thicken.
- In a small bowl, whisk together the cornstarch and a few tablespoons of cold milk to create a smooth paste. Gradually whisk this paste into the simmering milk mixture.
- Stir in the powdered sugar and vanilla extract. Cook for a few more minutes, until the mixture thickens slightly.
- Remove from heat and let the mixture cool completely.
Set and Coat the Kulfi
- Pour the cooled kulfi mixture into kulfi molds or small containers. Insert popsicle sticks if using molds.
- Freeze for at least 4 hours, or until almost solid. If the kulfi starts to become hard around the edges, remove and prick it with a toothpick or skewer to prevent cracking.
Make the Chocolate Coating
- In a small saucepan, melt the butter over low heat. Add the grated chocolate and stir until completely smooth and melted.
- Remove the kulfi from the freezer. Dip each kulfi into the melted chocolate, allowing excess to drip off.
- Immediately roll the chocolate-coated kulfi in the chopped nuts.
- Return the kulfi to the freezer for at least 30 minutes to allow the chocolate to set completely.
- Serve and enjoy!
