Prepare the Lentil Batter

  • Soak 1 cup of split black lentils (urad dal) in water for at least 4-6 hours, or overnight. Drain the lentils and discard the skins. Blend the lentils into a smooth paste using a blender. Whip the paste vigorously for 10-15 minutes until it becomes light and fluffy. Add 1.5 tsp salt, 1/2 tsp asafoetida (hing), and 1 tbsp fennel seeds. Mix well.

Fry the Vadas

  • Heat 2 cups of oil in a deep pan or kadai over medium heat. Once hot, gently drop spoonfuls of the lentil batter into the hot oil, flattening them slightly to form small patties (vadas). Fry the vadas until they turn golden brown and crisp on both sides.

Prepare the Yogurt Mixture

  • In a bowl, whisk together 500g yogurt (curd), 2 tsp red chili powder, 1 tsp sugar, 2 finely chopped green chilies, 1 tbsp finely chopped ginger, 2 tsp roasted cumin powder (jeera), and 1 tsp black salt. Mix until well combined.

Assemble the Dahi Vada

  • Once the vadas have cooled slightly, gently place them in the yogurt mixture. Let them soak for at least 30 minutes to absorb the flavors.
