Ingredients
 

For the Vadas (Dumplings)

  • 1 cup Lentils soaked for at least 4 hours, urad dal, black, split
  • 1 inch Ginger finely chopped
  • 1/4 tsp Cumin Seeds jeera, roasted, whole
  • 1.5 tsp Salt or to taste
  • 2 tbsp Oil for deep frying

Prepare the Vadas

  • Soak the urad dal for at least 4 hours. Drain the water completely.
  • Grind the soaked dal coarsely with the ginger, adding a little water if needed to a smooth paste. Do not over-blend.
  • Add salt and roasted cumin seeds to the dal mixture. Mix well.
  • Heat oil in a deep pan or kadai. Once hot, carefully drop small spoonfuls of the dal batter into the oil, forming small round vadas.
  • Deep fry the vadas until golden brown and crispy, ensuring they are cooked through. Remove and drain on paper towels.
  • Dip the fried vadas in a bowl of water for about 5 minutes to soften them slightly. Gently squeeze out excess water.

Prepare the Yogurt Mixture

  • In a bowl, whisk together the yogurt, salt, red chili powder, and sugar until smooth and creamy. Adjust the consistency by adding a little water if needed.
  • Gently add the softened vadas to the yogurt mixture, ensuring they are evenly coated.

Garnish and Serve

  • Garnish with chopped coriander leaves and a drizzle of sweet and sour chutney.
  • Chill the Dahi Vadas in the refrigerator for at least 30 minutes before serving for enhanced flavors. Serve chilled and enjoy!
