Ingredients
For the Vadas (Dumplings)
- 1 cup Lentils soaked for at least 4 hours, urad dal, black, split
- 1 inch Ginger finely chopped
- 1/4 tsp Cumin Seeds jeera, roasted, whole
- 1.5 tsp Salt or to taste
- 2 tbsp Oil for deep frying
For the Yogurt Mixture
- 1 cup Yogurt thick and creamy
- 1/2 tsp Salt to taste
- 1/4 tsp Chili Powder or to taste, red
- 1 tsp Sugar
For Garnishing
- 1/2 cup Coriander finely chopped
- 1.5 tbsp Tamarind Chutney khatti-meethi chutney, sour, sweet
Instructions
Prepare the Vadas
- Soak the urad dal for at least 4 hours. Drain the water completely.
- Grind the soaked dal coarsely with the ginger, adding a little water if needed to a smooth paste. Do not over-blend.
- Add salt and roasted cumin seeds to the dal mixture. Mix well.
- Heat oil in a deep pan or kadai. Once hot, carefully drop small spoonfuls of the dal batter into the oil, forming small round vadas.
- Deep fry the vadas until golden brown and crispy, ensuring they are cooked through. Remove and drain on paper towels.
- Dip the fried vadas in a bowl of water for about 5 minutes to soften them slightly. Gently squeeze out excess water.
Prepare the Yogurt Mixture
- In a bowl, whisk together the yogurt, salt, red chili powder, and sugar until smooth and creamy. Adjust the consistency by adding a little water if needed.
- Gently add the softened vadas to the yogurt mixture, ensuring they are evenly coated.
Garnish and Serve
- Garnish with chopped coriander leaves and a drizzle of sweet and sour chutney.
- Chill the Dahi Vadas in the refrigerator for at least 30 minutes before serving for enhanced flavors. Serve chilled and enjoy!
