It's a very comfort meal, prepared in every Odiya's kitchen during summer. About Pakhala-Pakhaḷa is an Odia term for an Indian food consisting of cooked rice washed or little fermented in water. The liquid part is known as toraṇi. It is popular in Odisha, Bengal.Eating pakhal has been recommended to prevent heat stroke in hot weather. A traditional Odia dish, it is prepared with rice, curd, cucumber, cumin seeds, fried onions and mint leaves. It is popularly served with roasted vegetables—such as potato, brinjal, badi and saga bhaja or fried fish, and many more!!. Aloo Besara Bhaja-Potato roasted in mustard paste.It isa very famous side dish with water rice. Badi Bhaja- Sun dried lentil dumpling. Ingredients
  

  • For Dahi pakhala- 2 bowl cooked rice 2 bowl water,1/2cup curd.For tempring-1 tsp oil,1/4tsp cumin,1/4tsp mustard,1 tsp grated ginger,1/4tsp chopped green chilli,1 tsp curry leaves
  • For Aloo Besara Bhaja/Potato roasted in mustard paste- 200gm baby potato
  • 1 tablespoon mustard oil 1/2 tsp mustard seeds,1 red chilli,1/2tsp Turmeric powder,salt to Taste,1 glass water
  • For mustard paste-4 tbsp mustard seeds 4 pods garlic,1 green Chilli,4 tbsp water
  • For Badi bhaja/sun dried lentil dumpling- A handful of Badi 1 tsp oil, 2 garlic pods,1 green Chilli,salt to taste
  • Pansha masala Bhaja- Young jack fruits fry-1 cup cleaned and chopped cubes,
  • For Pansha Masala bhaja- Young Jackfruit Masala fry
  • 1 bowl cleaned and chopped Jackfruits
  • For Masala-1 tbsp mustard oil 1 onion finely chopped,1/2 inch ginger crushed, garlic 4 pods(crushed),Green Chilli 1(crushed),1/2tsp Turmeric powder,1 tsp red chilli powder,salt to taste,1 bowl water

Instructions
 

  • For Dahi pakhala--Water Curd Rice- -In a big bowl and water and curd,whisk it. -Add cooked rice to it -For tempring-make min fry pan,, add oil to it Heat oil in a pan over medium heat. Add cumin seeds, mustard seeds,green chilli. W
  • When mustard seeds splutter, add grated ginger and curry leaves. Turn off the heat. Now pour the tempring into the rice bowl. Add salt to taste

  • Aloo beasra bhaja/Potatoes Roasted in mustard paste- -Clean and chopped the baby potato in ring shape.-In a pressure cooker add chopped potatoes and water a little salt and cook it to 2 whistle -
  • For mustard paste-add mustard seeds to mixie jar and blend to fine powder -Then add water, garlic and green Chilli and blend to fine paste -Heat oil in a pan,once heated add mustard seeds& red chilli -When mustard seeds splutter,add mustard paste,
  • Pansha Masala Bhaja/Young jackfruit Masala fry- -Pressure cook the cleaned jackfruit cubes to 2 whistle -Heat oil in a pan,add cumin and once splutter add finely chopped onions -Saute for 5 minutes,till turns translucent
  • Add crushed ginger, garlic and green chilli and saute for 2 minutes -Add cooked jackfruit and add turmeric powder and red chilli powder -Cool till Masala are cooked and oil start coming from sides.
