- 1 tsp Turmeric Powder also known as haldi
- 10 leaves Curry Leaves

- Peel and chop the potatoes into bite-sized pieces. Finely chop the onion and green chilies. Mince the garlic.
Tempering the Spices
- Heat oil in a pan or pot over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add curry leaves and green chilies. Sauté for a minute until fragrant.
Sautéing the Vegetables
- Add the chopped onions and sauté until they soften. Then, add the minced garlic and sauté for another minute until fragrant. Stir in turmeric powder.
Simmering the Curry
- Add the chopped potatoes, salt, and sugar (if using). Stir well to coat the potatoes with the spices. Add half a cup of water, cover, and simmer until the potatoes are tender (about 10-15 minutes), stirring occasionally.
