  • 1 cup Yogurt full-fat; also known as curd or dahi, plain
  • 1.5 tsp Salt or to taste
  • 1/2 tsp Sugar optional, to balance the tartness
  • 1/2 cup Water

Preparation

  • Peel and chop the potatoes into bite-sized pieces. Finely chop the onion and green chilies. Mince the garlic.

Tempering the Spices

  • Heat oil in a pan or pot over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add curry leaves and green chilies. Sauté for a minute until fragrant.

Sautéing the Vegetables

  • Add the chopped onions and sauté until they soften. Then, add the minced garlic and sauté for another minute until fragrant. Stir in turmeric powder.

Simmering the Curry

  • Add the chopped potatoes, salt, and sugar (if using). Stir well to coat the potatoes with the spices. Add half a cup of water, cover, and simmer until the potatoes are tender (about 10-15 minutes), stirring occasionally.

Incorporating the Yogurt

  • Once the potatoes are cooked, gently stir in the yogurt. Cook for another 2-3 minutes, or until the sauce slightly thickens. Do not boil. Taste and adjust salt as needed.
