- 3 Tomato large, roughly chopped
- 1 inch Ginger roughly chopped
- 7 clove Garlic peeled
- 1.5 tsp Salt adjust to taste
- 1 tsp Chili Powder red
- 1 tbsp Coriander Powder dhania
- 1/3 tsp Turmeric Powder haldi
- 1 tsp Garam Masala
- 2 tbsp Coriander dhania, chopped, for garnish
Instructions
Prepare the Spice Paste
- Combine onions, tomatoes, ginger, and garlic in a blender. Blend into a smooth paste.
Sauté the Paste
- Heat oil in a pressure cooker over medium-low heat. Add the spice paste and sauté for 7-8 minutes, stirring frequently, until fragrant and slightly thickened.
Add Spices and Mutton
- Stir in salt, red chili powder, coriander powder, turmeric powder, and garam masala. Mix well. Add the mutton and cook for 5 minutes, stirring occasionally.
Pressure Cook the Mutton
- Add 2 cups of water, stir to combine, and bring to a simmer. Secure the lid of the pressure cooker and cook for 5 whistles. Allow the pressure to release naturally.
Add Potatoes and Pressure Cook Again
- Carefully open the pressure cooker. Add the potatoes and 1/3 cup of water. Stir gently. Close the lid and cook for 2-3 additional whistles. Allow the pressure to release naturally.
Garnish and Serve
- Gently stir in the chopped coriander leaves. Check seasoning and adjust if needed. Serve hot with naan, roti, rice, or your favorite side dish.
