- 2 tsp Garam Masala

- 2-3 tbsp Mustard Oil
- 1 tbsp Lemon Juice
- 1 handful Coriander fresh, chopped

Instructions
Preparing the Meat and Spices
- In a pressure cooker, combine mutton, potatoes, onions, tomatoes, dried red chilies, ginger-garlic paste, cinnamon stick, cardamom, cloves, bay leaf, star anise, chili powder, coriander powder, cumin seeds, fennel seeds, turmeric powder, garam masala, and salt. Mix well.
Sautéing the Ingredients
- Cover the cooker (don't seal it yet) and cook over medium-low heat, stirring continuously. Cook until the mutton releases its water and the oil begins to separate from the sides (about 5-10 minutes).
Pressure Cooking
- Add water to cover the mutton completely. Secure the lid and pressure cook for 10-15 minutes.
Finishing Touches
- Allow the pressure to release naturally. Open the cooker and gently stir in the chopped coriander leaves and lemon juice. Adjust the gravy consistency by adding more water if needed. Remove from heat and serve hot.

Expert Tips for the Perfect Aloo Gosht
- For extra tender mutton, marinate it in yogurt and spices for at least 2 hours before cooking.
- Adjust the amount of chili powder and dried red chilies to suit your spice preference.
- If you don't have a pressure cooker, you can cook this dish in a pot on the stovetop, but it will require a longer cooking time (approximately 1-1.5 hours).
- Garnish with fresh cilantro and a squeeze of lime before serving for added vibrancy and flavor.
