Ingredients
Veggie Patties
- 2 Carrots finely chopped
- 1 Beetroot finely chopped
- 2 Potatoes finely chopped
- 1 Chili finely chopped, green
- 1 inch Ginger grated
- 1 tsp Cumin Seeds
- 1/4 tsp Chili Powder red
- 1 1/2 tsp Salt or to taste
- 2 Tbsp Oil for frying
- 2 Tbsp Corn Flour
- 1/2 cup Breadcrumb
Burger Assembly
- 2 Burger Buns
- 2 Tbsp Mayonnaise
- 2 slices Onion red, thinly sliced
- 2 slices Tomato thinly sliced
- 2 leaves Lettuce
Instructions
- Blanch the carrots, beetroot, and potatoes in a pressure cooker until slightly softened. This helps retain their vibrant color and nutrients while reducing cooking time.
- In a large bowl, mash the blanched vegetables. Add the grated ginger, chopped green chili, cumin seeds, red chili powder, salt, and corn flour. Mix thoroughly to combine.
- Divide the mixture into two equal portions. Shape each portion into a flat, round patty of medium thickness.
- Coat each patty evenly with bread crumbs, pressing gently to ensure they adhere. This creates a crispy exterior when fried.
- Heat the oil in a large pan over medium heat. Shallow fry the patties until golden brown and crispy on both sides, about 3-4 minutes per side.
- Lightly toast the burger buns. This enhances their texture and prevents them from becoming soggy.
- Spread mayonnaise on both halves of each bun. Place a lettuce leaf on the bottom bun.
- Top the lettuce with a few slices of red onion, a veggie patty, tomato slices, and the other half of the bun.
- Serve the Crispy Veggie Burgers immediately and enjoy!
Recipe Notes
Good To Know
- For an extra-crispy coating, double-dip the veggie patties: dust them in flour, dip in a flour-water slurry, and finally coat with breadcrumbs before shallow frying.
- For added flavor, spread a thin layer of kasundi (Bengali mustard sauce) or green chutney on the burger buns.
- Sauté grated beetroot separately before mixing to maintain vibrant colors and prevent bleeding.
Expert Tips
- Customize your veggie patties by adding other vegetables like grated carrots, zucchini, or corn.
- For a healthier option, bake the patties instead of frying. Lightly brush them with oil and bake at 400°F (200°C) for 20-25 minutes, flipping halfway through.
- Serve these veggie chops on burger buns with your favorite toppings, or enjoy them as a standalone snack with a dipping sauce.
Storage Instructions
- Leftover patties can be cooled, wrapped in foil, and refrigerated for up to 2 days. Reheat in a toaster oven or on a hot pan to restore crispness.
