Instructions

Prepare the Vegetables

  • Soak 1/2 cup chopped carrots, 1/2 cup chopped green beans, and 1/2 cup green peas in hot water for 10 minutes.

Sauté the Onions and Spices

  • In a pan, melt 1 tablespoon of butter. Add 1/4 teaspoon asafoetida and 1/2 cup finely chopped onions. Sauté for 2 minutes until softened.

Combine the Patty Ingredients

  • Add the soaked vegetables to the pan and cook for 3-4 minutes. Stir in 2 cups mashed potatoes, 1/4 teaspoon turmeric powder, 1/4 teaspoon garam masala, 1/4 teaspoon red chili powder, 1/2 teaspoon chaat masala, and salt to taste. Mix well. Add 3/4 cup soaked rice or poha; mix and mash gently to combine.

Shape and Coat the Patties

  • Shape the mixture into 8 round patties. In a separate bowl, whisk together 3 tablespoons all-purpose flour, 2 tablespoons corn flour, 1/4 teaspoon salt, and 1/4 cup water until smooth. Coat each patty in breadcrumbs, then dip into the batter, and coat again in breadcrumbs. Refrigerate for 30 minutes.

Fry the Patties

  • Heat oil in a deep pan or wok over medium heat. Carefully add the patties and fry until golden brown and crispy on both sides.

Toast the Buns

  • Lightly toast the burger buns on a hot griddle or pan for about 1 minute per side.

Assemble the Burgers

  • Spread eggless mayonnaise on one bun half. Top with a lettuce leaf, a fried patty, more mayonnaise, and a cheese slice (optional). Cover with the other bun half.

Serve

  • Your homemade McVeggie Burgers are ready to serve!

Recipe Notes

Expert Tips

  • For extra flavor, marinate the vegetable mixture for 30 minutes before shaping the patties.
  • If you don't have poha, you can substitute with cooked quinoa or breadcrumbs for added texture.
  • Adjust the amount of chili powder to control the spiciness of the patties.
  • Don't overcrowd the pan when frying the patties; fry them in batches to ensure even browning and crispiness.
