  • Wash spinach thoroughly under running water. Pat dry completely with paper towels. Remove the stems; you'll only need the leaves.

  • Finely chop the spinach leaves.

Dry Roasting & Grinding

  • Dry roast sesame seeds in a small pan over medium heat until fragrant. Set aside. In a small bowl, coarsely grind the sugar and red chili flakes together using a mortar and pestle or a spice grinder.

Deep Frying

  • Heat vegetable oil in a deep pot or wok to 350°F (175°C). If using flour, lightly dredge the chopped spinach in flour before frying.
