Ingredients
For the Spinach
- 2 bunch Spinach fresh, medium-sized
- 1/2 cup All-Purpose Flour for dredging (optional, helps with crispiness)
For the Seasoning
- 2 tbsp Sesame Seeds
- 1 tsp Chili Flakes adjust for desired spice level, or to taste, red
- 2 tsp Sugar granulated
- 1.5 tsp Salt or to taste
For Frying
- 2 cups Vegetable Oil or enough for deep frying
Instructions
Preparation
- Wash spinach thoroughly under running water. Pat dry completely with paper towels. Remove the stems; you'll only need the leaves.
Spinach Prep
- Finely chop the spinach leaves.
Dry Roasting & Grinding
- Dry roast sesame seeds in a small pan over medium heat until fragrant. Set aside. In a small bowl, coarsely grind the sugar and red chili flakes together using a mortar and pestle or a spice grinder.
Deep Frying
- Heat vegetable oil in a deep pot or wok to 350°F (175°C). If using flour, lightly dredge the chopped spinach in flour before frying. Carefully add the spinach to the hot oil, working in batches to avoid overcrowding. Fry until the spinach is crispy and bright green, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
Seasoning and Serving
- Immediately toss the crispy spinach with the sesame seeds, chili-sugar mixture, and salt. Serve hot and enjoy!
Recipe Notes
Expert Tips for Extra-Crispy Spinach
- Pat the spinach dry: Excess moisture will prevent the spinach from crisping properly. Thoroughly dry the leaves before frying.
- Don't overcrowd the pan: Frying in batches ensures even cooking and maximum crispiness. Overcrowding will lower the oil temperature and result in soggy spinach.
- Control the heat: Maintain a consistent oil temperature for optimal results. Use a thermometer to monitor the oil temperature and adjust the heat as needed.
- Season immediately: Toss the hot, crispy spinach with the seasonings immediately after frying to ensure the flavors adhere properly and the spinach remains crunchy.
