  • 6-8 Shallots or about 1/2 cup finely chopped, small
  • 1/2 cup Coconut fresh, grated
  • 4 cup Water
  • 2 tbsp Coconut Oil 1 tbsp for frying, divided; 1 tbsp for dough

Prepare the Coconut-Shallot Paste

  • Blend fresh grated coconut, shallots, and cumin seeds into a smooth paste using a little water. Set aside.

Dry Roast the Rice Flour

  • Heat a pan over medium heat and dry roast the rice flour for 5 minutes, stirring constantly, until lightly fragrant. Add the coconut-shallot paste and sesame seeds; mix well and remove from heat.

Prepare the Dough

  • Boil 4 cups of water with 2 tablespoons of coconut oil and salt. Once boiling, remove from heat. Gradually add the hot water to the roasted rice flour mixture, stirring continuously until a soft, thick dough forms—similar in consistency to roti dough. If needed, add more salt to taste.

Knead and Rest the Dough

  • Knead the dough until smooth and elastic. Cover with a damp cloth and let rest for at least 30 minutes.

Shape the Kuzhalappam

  • Grease your palms with a little oil. Take a lemon-sized portion of the dough and flatten it gently into a thin circle on a lightly oiled plastic sheet. Roll it up tightly into a cylinder and pinch the ends to seal. Repeat with the remaining dough.

Fry the Kuzhalappam

  • Heat the remaining coconut oil in a pan or kadai over medium heat. Carefully fry the Kuzhalappam until golden brown and crispy. Remove from the oil and drain on paper towels.

Cool and Store

  • Let the Kuzhalappam cool completely before storing them in an airtight container. They will stay fresh for several days.

  • For extra flavor, add a pinch of chili powder to the dough.
  • Don't overcrowd the pan while frying; this will ensure even cooking and crispiness.

  • Allowing the dough to rest is crucial; this develops gluten and prevents the Kuzhalappam from breaking during frying.
