- 1/2 cup Semolina also known as sooji
- 1/2 tsp Salt adjust to taste
- 1/4 tsp Baking Soda
- 1/2 tsp Cumin Seeds
- 1/2 tsp Chili Flakes adjust to your spice preference, red
Instructions
Prepare the Dough
- Combine all-purpose flour, semolina, salt, red chili flakes, cumin seeds, and baking soda in a large bowl. Mix well.
- Add softened butter and grated cheese. Mix until the mixture resembles breadcrumbs.
- Stir in the pureed spinach until a firm dough forms.
- Cover the dough with a damp cloth and let it rest for at least 10 minutes.
Shape and Fry the Crackers
- Divide the dough into 16 equal portions. Roll each portion into a 5-inch circle.
- Cut each circle into 4 triangle shapes.
- Heat the oil in a frying pan over medium heat. The oil should be about 1 1/2 inches deep. Test the oil by dropping in a small piece of dough; it should sizzle gently.
