  • 1/2 cup Cheese grated cheddar or your preferred type
  • 1 cup Spinach fresh spinach, pureed. you may need to adjust amount based on moisture content.
  • 1 1/2 cup Oil for frying, such as vegetable or canola oil

Instructions
 

Prepare the Dough

  • Combine all-purpose flour, semolina, salt, red chili flakes, cumin seeds, and baking soda in a large bowl. Mix well.
  • Add softened butter and grated cheese. Mix until the mixture resembles breadcrumbs.
  • Stir in the pureed spinach until a firm dough forms.
  • Cover the dough with a damp cloth and let it rest for at least 10 minutes.

Shape and Fry the Crackers

  • Divide the dough into 16 equal portions. Roll each portion into a 5-inch circle.
  • Cut each circle into 4 triangle shapes.
  • Heat the oil in a frying pan over medium heat. The oil should be about 1 1/2 inches deep. Test the oil by dropping in a small piece of dough; it should sizzle gently.
  • Carefully add the triangle crackers to the hot oil, ensuring not to overcrowd the pan. Fry until both sides are light golden brown.
  • Remove the crackers from the oil and place them on a wire rack to drain excess oil.
  • Allow the crackers to cool completely; they will crisp up as they cool.
