Ingredients
Fruit Purees
- 1 cup Blueberries washed
- 1 cup Strawberries washed and hulled
Other Ingredients
- 1 Kiwi gold, thinly sliced
- 1 Tbsp Greek Yogurt plain or vanilla
- 2 tsp Honey
- 2 tsp Lemon Juice freshly squeezed
Instructions
- Gather all the ingredients.
- Prepare the strawberry puree. In a blender, combine the hulled strawberries, 1 teaspoon of honey, 1 teaspoon of lemon juice, and a splash of water. Blend until smooth.
- Prepare the blueberry puree. In the blender (no need to wash it first), combine the washed blueberries, 1 teaspoon of honey, 1 teaspoon of lemon juice, and a splash of water. Blend until smooth.
- Place a thin slice of kiwi into each popsicle mold, positioning it against one side. This creates a beautiful visual effect once frozen.
- Layer the popsicles. Add a layer of strawberry puree, followed by a layer of Greek yogurt, and then a layer of blueberry puree. Repeat these layers to fill each mold. Gently swirl the layers together with a stick or fork for a tie-dye effect. This creates a visually appealing swirl.
- Cover the popsicle molds and freeze for at least 12 hours, or until solid.
- To serve, gently remove the popsicles from the molds. Run the molds under warm water for a few seconds if needed. Enjoy!
Recipe Notes
Good To Know
- You can use any type of berries.
- For a visually striking tie-dye effect, layer small spoonfuls of each fruit puree and yogurt mixture into the molds, then gently swirl with a skewer or chopstick before freezing. Avoid overmixing to preserve the distinct color streaks.
- For a fully dairy-free or vegan version, substitute Greek yogurt with coconut or almond milk yogurt and use maple syrup or agave instead of honey.
- For extra texture and a vitamin boost, fold in finely chopped fruit pieces or zest some lemon into the yogurt mixture before pouring into molds.
- To easily release the popsicles from the molds, briefly run the outside of the molds under warm (not hot) water for 10-15 seconds, then gently wiggle the sticks to loosen.
Expert Tips
- For creamier popsicles, use full-fat Greek yogurt. For a lighter treat, use low-fat or non-fat yogurt.
- If your fruit is very tart, you may need to adjust the amount of sweetener to your liking.
- Get creative with your mix-ins! Try adding chopped nuts, seeds, or even a drizzle of chocolate before freezing.
Storage Instructions
- Store popsicles in an airtight container or freezer bag in the freezer for up to 2 months.
