Ingredients
For the Prawns
- 12 large Prawns peeled and deveined
For the Tempura Batter
- 1/2 cup Tempura Flour
- 1/2 cup Water add gradually until desired consistency is reached
- 1 tsp Salt or to taste
- 1/2 tsp Pepper white
For the Peppers and Garnish
- 1/2 Bell Peppers finely chopped, red
- 1/2 Bell Peppers finely chopped, yellow
- 1/2 Bell Peppers finely chopped, green
- 1/2 tsp Chili finely chopped (optional), green
- 2 tbsp Vegetable Oil for frying
- 1 tbsp Cooking Oil for sautéing peppers
Instructions
Prepare the Prawns
- Clean and wash the prawns thoroughly. Pat them dry with paper towels.
Make the Tempura Batter
- In a bowl, whisk together tempura flour, ice water, salt, and white pepper until a smooth, thick batter forms. Avoid overmixing.
Fry the Prawns
- Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C). Dip each prawn into the batter, ensuring it's fully coated. Carefully place the battered prawns into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per side.
Sauté the Peppers
- Heat cooking oil in a separate pan or wok over medium heat. Add the chopped bell peppers and green chili (if using) and sauté until slightly softened but still crisp, about 3-5 minutes.
Combine and Serve
- Add the fried prawns to the pan with the peppers. Stir gently to combine. Season with additional salt and pepper to taste. Serve immediately while hot and crispy.
Recipe Notes
Expert Tips for Perfect Salt and Pepper Prawns
- For extra crispy prawns, ensure the prawns are completely dry before dipping them in the batter. Excess moisture will prevent the batter from crisping up properly.
- Don't overcrowd the pan when frying the prawns. Work in batches to maintain the oil temperature and ensure even cooking. Overcrowding will lower the oil temperature, resulting in soggy prawns.
- Use high-quality tempura flour for the best results. It's specifically designed to create a light and airy batter.
- If you prefer a spicier dish, add more green chili or a dash of chili flakes to the sautéed peppers.
