Ingredients
For the Prawns
- 200 gm Prawn
For the Marinade
- 2 tbsp Rice Flour
- 1 tsp Turmeric powder
- 1 tsp Chili Powder
- 2 tsp Lemon Juice
- 1 tsp Garlic paste
- 1 tsp Ginger paste
- 1 1/2 tsp Salt or to taste
For the Pan-Frying
- 2 tbsp Mustard Seeds
- 1 tsp Cumin Seeds
- Several Toothpick
Instructions
- Rinse the prawns under cold water. Pat them dry with paper towels.
- In a bowl, combine the turmeric powder, salt, and lemon juice. This helps clean the prawns and removes any fishy odor.
- Pierce each prawn lengthwise with a toothpick. This prevents them from curling up during cooking and ensures even cooking.
- In a bowl, combine the rice flour, turmeric powder, chili powder, lemon juice, garlic paste, ginger paste, and salt. Add the prawns and mix well to coat them evenly.
- Heat the mustard oil in a large frying pan over medium-high heat. Add the cumin seeds and let them sizzle for a few seconds to release their aroma.
- Carefully place the marinated prawns in the hot pan. Cook for 2-3 minutes per side, until they turn golden brown and crispy. Don't overcrowd the pan; work in batches if necessary.
- Avoid overcooking the prawns, as this will make them rubbery. The prawns should be opaque and cooked through, but still tender.
- Remove the prawns from the pan and place them on a plate lined with paper towels to absorb any excess oil. Remove the toothpicks before serving.
- Serve the crispy pan-fried prawns hot with steamed rice and your favorite prawn curry.
Recipe Notes
Good To Know
- For a subtle smoky flavor, briefly toast the rice flour in a dry pan before adding it to the prawns. This enhances both aroma and depth in the finished dish.
- If you prefer a richer, creamier texture, stir in a tablespoon of coconut milk at the end of cooking. This complements the Bengali flavors beautifully without overpowering the tanginess.
- To prevent the prawns from turning rubbery, cook them over medium heat and remove from the pan as soon as they turn pink and opaque. Finish the rice separately before combining everything just before serving.
- Garnish with a generous handful of chopped fresh coriander and a few thin slices of green chili for a traditional Bengali touch and an extra pop of color and heat.
Expert Tips
- Use high-quality rice flour for the best texture and flavor in your dish. Freshly ground rice flour, if available, will provide the most authentic Bengali taste.
- Adjust the amount of green chilies according to your spice preference. For a milder dish, remove the seeds before slicing.
- Don't overcook the prawns. Overcooked prawns will be tough and dry. It's better to slightly undercook them as they will continue to cook from the residual heat.
Storage Instructions
- Store leftover prawn and rice dish in an airtight container in the refrigerator for up to 2 days.
- Reheat gently in a pan over medium heat or in the microwave, adding a splash of water or broth to prevent drying out.
