Ingredients
For the Sabudana Tikkis
- 1 cup Tapioca Pearl rinse thoroughly before soaking, sago pearls
- 1 medium Potato boiled and mashed
- 1/2 cup Peanuts roasted and coarsely ground
- 1 tbsp Chili finely chopped, green
- 1/4 cup Coriander finely chopped (cilantro)
- 1 tsp Salt adjust to taste
- 1/2 tsp Chili Powder red
- 1/2 tsp Coriander Powder
- 1/2 tsp Dry Mango Powder dry mango powder
- 1 tbsp Lemon Juice
For Frying
- 2 tbsp Oil for frying
Instructions
Prepare the Sabudana
- Soak the sabudana in enough water for at least 4 hours, or until it is plump but not mushy. Drain any excess water.
Make the Tikki Mixture
- Boil and mash the potato. Roast the peanuts lightly and then coarsely grind them. In a large bowl, combine the mashed potato, ground peanuts, soaked sabudana, green chilies, coriander leaves, salt, red chili powder, coriander powder, amchur powder, and lemon juice. Mix everything thoroughly until well combined.
Shape and Fry the Tikkis
- Form the mixture into small, flat patties (tikkis). Heat oil in a non-stick pan or skillet over medium heat. Carefully place the tikkis in the hot oil, ensuring not to overcrowd the pan.
Fry until Golden Brown
- Fry the tikkis on both sides until they turn golden brown and crisp, flipping them gently as needed. Reduce heat if necessary to prevent burning. Drain the excess oil on paper towels.
Serve
- Serve the hot Sabudana Tikkis immediately with yogurt or your favorite chutney.
Recipe Notes
Expert Tips for Perfect Sabudana Tikkis
- Soaking Time: The soaking time for sabudana is crucial. If soaked for too long, they'll become mushy. If not enough, they will be too hard.
- Don't Overmix: Gently combine the ingredients; overmixing can make the tikkis tough.
- Oil Temperature: Medium heat is key for even cooking and crispy tikkis. Avoid high heat, which can lead to burning.
- Serving Suggestions: Enjoy these with mint chutney, tamarind chutney, or even a dollop of plain yogurt for a cooling contrast.
