Ingredients
For the Pumpkin Filling
- 100 gm Pumpkin grated, yellow
- 50 gm Gram Flour besan
- 1 tsp Turmeric powder
- 1 tsp Cumin ground
- 1 tsp Chili Powder red
- 1 tsp Poppy Seeds
- Salt to taste
For the Taro Leaves and Assembly
- 12-15 Taro Leaves fresh
For Pan-Frying
- 1 tbsp Mustard Oil
- ½ tsp Poppy Seeds
- ¼ tsp Chili Powder kashmiri, red
Instructions
- In a mixing bowl, combine the grated pumpkin, gram flour, turmeric powder, ground cumin, red chili powder, poppy seeds, and salt.
- Gradually add a little water to the pumpkin mixture and mix well to form a thick batter. The batter should be thick enough to coat the taro leaves.
- Lay out a taro leaf on a flat surface. Spread a thin layer of the pumpkin batter evenly over the leaf.
- Carefully roll the taro leaf tightly, starting from one end. Repeat this process with the remaining taro leaves and batter. You can stack 4-5 leaves before rolling to make larger rolls.
- Steam the taro leaf rolls for 10 minutes. Steaming helps to soften the leaves and cook the pumpkin filling thoroughly.
- Once steamed, let the rolls cool slightly before cutting them into smaller pieces. This makes them easier to handle and pan-fry.
- Heat the mustard oil in a pan over medium heat. Add the poppy seeds and Kashmiri red chili powder. The poppy seeds will sizzle and the chili powder will infuse the oil with color and flavor.
- Shallow fry the taro rolls in the spiced oil until both sides are golden brown and crispy. This adds a wonderful texture and enhances the overall flavor.
