Ingredients
For the Potato Nests
- 3 Potato boiled and mashed
- 1/2 cup cup Cottage Cheese grated
- 1 tbsp All-purpose Flour maida
- 1 cup Vermicelli
- 1 1/2 tsp Salt or as per taste
- 1 tsp Ginger grated
- 1 tsp Chili Powder red
- 1 tsp Chili Flakes
- 1/2 tsp Chaat Masala
- 1 tbsp Coriander chopped
- 1/2 tsp Chili chopped, green
For the Paneer "Eggs"
- 1/2 cup cup Cottage Cheese grated
- 1/4 tsp Pepper black, crushed
- 1/2 tsp Corn Flour
- 1/2 tsp Salt or as per taste
Instructions
- Boil the potatoes until tender. Drain and mash them thoroughly.
- In a bowl, combine the mashed potatoes, half of the grated paneer, salt, red chili powder, chili flakes, chaat masala, grated ginger, chopped cilantro, and chopped green chili. Mix well to incorporate all the ingredients.
- Take a portion of the potato mixture, roughly the size of a tomato. Shape it into a bowl or nest-like form.
- In a small bowl, whisk together the all-purpose flour and enough water to create a thin, smooth paste. This will act as an adhesive for the vermicelli.
- Dip each potato nest into the all-purpose flour paste, ensuring it's fully coated. Then, roll the nest in the vermicelli, pressing gently so it adheres evenly.
- Heat oil in a deep fryer or large pot. Carefully place the potato nests into the hot oil and deep-fry until they turn a beautiful golden brown and become crispy. This ensures a perfectly cooked and crunchy exterior.
- Remove the fried potato nests from the oil and place them on a plate lined with paper towels to absorb excess oil. This helps maintain their crispiness.
- To prepare the paneer "eggs," combine the remaining grated paneer with salt, crushed black pepper, and corn flour in a bowl. Mix well.
- Shape the paneer mixture into small balls. Dip each ball into the all-purpose flour paste and briefly fry them for about 30 seconds. Avoid overcooking, as you want them to remain white and soft, mimicking the appearance of eggs.
- Place a few cilantro leaves inside each potato nest. Gently nestle the fried paneer "eggs" on top of the cilantro. Serve hot with your favorite chutney or sauce.
