Instructions

  • In a large bowl, combine the corn paste, gram flour, yogurt, green chili paste, and salt.
  • Mix well, adding water gradually until a thick batter forms. The batter should be thick enough to hold its shape but still pourable.
  • Fill a steamer with sufficient water and bring to a boil. Grease small idli molds. This will prevent the pakoras from sticking.
  • Just before steaming, whisk the Eno fruit salt into the batter. This will create a light and airy texture.
  • Pour the batter into the greased idli molds and steam for about 5 minutes, or until cooked through. A toothpick inserted into the center should come out clean.
  • Once cooked, allow the button pakoras to cool completely before removing them from the molds. This will make them easier to handle and prevent them from breaking.
  • Heat oil in a deep fryer or large pot over medium-high heat. The oil is ready when a small drop of batter sizzles immediately.
  • Carefully drop the steamed button pakoras into the hot oil, a few at a time, and deep fry until golden brown and crispy. Avoid overcrowding the pot, which can lower the oil temperature and result in soggy pakoras.
  • Remove the pakoras with a slotted spoon and place them on a wire rack or paper towel-lined plate to drain excess oil.
  • Garnish with corn kernels, mint powder, and chaat masala. Serve hot with salad sticks and a yogurt dip or dip of your choice.

Recipe Notes

Good To Know

  • For an extra burst of flavor and texture, try adding finely chopped fresh coriander leaves and a handful of grated cheese to the batter before shaping the pakoras.
  • If you want to make these pakoras gluten-free, ensure you use only gram flour (besan) and skip any wheat-based flours that may be included in the recipe.
  • After steaming, let the pakoras cool completely and refrigerate them uncovered for an hour; this helps dry the surface, leading to even crispier results when frying.
  • Serve the button pakoras with a tangy tamarind chutney or a spicy mint-coriander dip to complement their rich, savory flavor and add a refreshing contrast.

Expert Tips

  • Don't overcrowd the pan when frying the pakoras. Fry in batches to ensure even cooking and a crispy exterior.
  • For a healthier option, you can bake the pakoras instead of frying. Preheat your oven to 400°F (200°C) and bake for 20-25 minutes, flipping halfway through.
  • Adjust the consistency of the batter by adding water gradually. The batter should be thick enough to coat the vegetables but not too runny.

Storage Instructions

  • Store leftover pakoras in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven or air fryer for best results.
