- 1 cup Gram Flour chickpea flour
- 1 Tbsp Rice Flour
- 1 tsp Chili Powder red
- 1/2 tsp Ajwain seeds

- In a large mixing bowl, combine the besan (chickpea flour), rice flour, red chili powder, and ajwain seeds.
- Add the finely chopped ginger and onion to the dry ingredients.
- Add the chopped spinach to the bowl. Mix all the ingredients together thoroughly.
- Gradually add small amounts of water to the mixture, mixing well until a thick batter forms. The batter should be thick enough to coat the spinach but not too runny. Avoid adding too much water at once.
- Heat oil in a deep pan or kadai over medium-high heat. The oil is ready when a small drop of batter sizzles and floats to the top.
- Carefully drop small spoonfuls of the spinach batter into the hot oil. Do not overcrowd the pan. This ensures even cooking and a crispy texture.
- Deep-fry the pakora until they turn golden brown and crispy, turning them occasionally for even browning.
- Once cooked, remove the pakora from the oil using a slotted spoon. Place them on a plate lined with paper towels to absorb excess oil.
