  • In a large mixing bowl, combine the besan (chickpea flour), rice flour, red chili powder, and ajwain seeds.
  • Add the finely chopped ginger and onion to the dry ingredients.

  • Add the chopped spinach to the bowl. Mix all the ingredients together thoroughly.
  • Gradually add small amounts of water to the mixture, mixing well until a thick batter forms. The batter should be thick enough to coat the spinach but not too runny. Avoid adding too much water at once.
  • Heat oil in a deep pan or kadai over medium-high heat. The oil is ready when a small drop of batter sizzles and floats to the top.
