Ingredients
 

For the Spinach Mixture:

  • 10 oz Spinach fresh, thoroughly washed and roughly chopped
  • 1 Onion finely chopped, medium
  • 2-3 Chili Pepper adjust to taste, finely chopped, green
  • 1/4 cup Coriander cilantro, finely chopped

Prepare the Spinach Mixture

  • Wash and chop the spinach. Finely chop the onion and green chilies. Combine the spinach, onion, green chilies, and coriander in a bowl.

Make the Batter

  • In a large bowl, whisk together chickpea flour, rice flour, ginger-garlic paste, red chili powder, garam masala, coriander powder, cumin seeds, black pepper, and salt.
  • Gradually add water, whisking continuously until a smooth, slightly thick batter forms. The batter should be slightly thicker than pancake batter.

Combine and Fry

  • Gently fold the spinach mixture into the batter, ensuring it's evenly distributed.
  • Heat the oil in a deep pan or kadai over medium-high heat. Once hot, carefully drop spoonfuls of the batter into the oil, ensuring not to overcrowd the pan.
