Ingredients
 

For the Onion Bajji

  • 2 Onion large sized, thinly sliced into rounds; do not separate layers
  • 0.5 cup Gram Flour also known as besan
  • 0.25 cup Rice Flour
  • 0.25 tsp Carom Seed carom seeds
  • 0.5 tsp Chili Powder adjust to your spice preference
  • 1 pinch Baking Soda
  • 1.5 tsp Salt or to taste
  • 0.5 cup Water more may be needed for desired batter consistency
  • 1 cup Oil for deep frying; vegetable or canola oil recommended

For Serving (Optional)

  • Chutney such as mint-coriander or tamarind chutney, your favorite chutney

Instructions
 

Prepare the Onions

  • Peel and thinly slice the onions into rounds. Do not separate the onion layers.

Make the Batter

  • In a mixing bowl, combine the gram flour, rice flour, ajwain, chili powder, baking soda, and salt. Gradually add water, whisking constantly until a smooth, slightly thick batter forms. The batter should coat the onion slices well but not be too runny.

Fry the Onion Bajjis

  • Heat the oil in a deep pan or kadai over medium heat. Once the oil is hot enough (a small piece of batter will sizzle immediately), reduce the heat to medium-low. Dip each onion slice into the batter, ensuring it's fully coated. Carefully drop the battered onion slices into the hot oil, frying in batches to avoid overcrowding.

Cook and Drain

  • Fry the onion bajjis until they are golden brown and crispy on both sides. This will take about 2-3 minutes per side. Remove the fried bajjis with a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.
