Instructions

Prepare the Fenugreek Leaves

  • Wash and thoroughly clean the fenugreek leaves. Chop them finely, discarding any tough stems.

Make the Batter

  • In a large bowl, whisk together the gram flour, asafoetida, red chili powder, salt, chopped ginger, and carom seeds.

Combine and Adjust

  • Add the chopped fenugreek leaves to the dry mixture and mix well. The leaves will release moisture; add water gradually until you achieve a smooth, slightly thick batter, similar in consistency to pancake batter.

Fry the Pakoras

  • Heat the oil in a deep-fryer or wok over medium heat. Once hot (a pinch of batter should sizzle immediately), carefully drop spoonfuls of the batter into the oil, ensuring not to overcrowd the pan.

Cook Until Golden Brown

  • Fry the pakoras, turning occasionally, until they are golden brown and crispy on all sides. This usually takes 2-3 minutes per batch.

Drain and Serve

  • Remove the pakoras from the oil and place them on a paper towel-lined plate to drain excess oil.

Garnish and Enjoy

  • Garnish with chaat masala. Serve hot with your favorite dipping sauce, such as tamarind chutney or ketchup, alongside a cup of chai or coffee.

Recipe Notes

Expert Tips for Perfect Methi Pakoras

  • For extra crispy pakoras, ensure the oil is hot enough before adding the batter.
  • Don't overcrowd the pan while frying; work in batches to maintain the oil temperature and achieve even cooking.
  • Adjust the amount of red chili powder to suit your spice preference.
  • For a more flavorful batter, you can add a pinch of turmeric powder.
