  • Finely chop the aajwain leaves, green chili, and fresh cilantro. In a mixing bowl, combine the mashed potatoes, chopped aajwain leaves, green chili, and cilantro.

  • Add the roasted cumin powder, coriander powder, dry mango powder, and salt to the potato mixture. Mix thoroughly until all ingredients are well combined.
  • Take a small portion of the mixture and shape it into a round disc, about 2 inches in diameter. Gently press down with your palm to flatten slightly.
  • Spread the rice flour on a plate. Coat each pakora evenly with the rice flour, ensuring it's lightly covered on all sides. This coating helps create a crispy texture when fried.
  • Heat oil in a shallow pan over medium heat. Once the oil is hot, carefully place the pakoras in the pan, ensuring not to overcrowd it. Shallow fry the pakoras for 2-3 minutes on each side, or until they turn golden brown and crispy.
