  • 1/2 Onion finely chopped
  • 1 tsp Salt adjust to taste
  • 2 cup Oil for deep frying; vegetable or canola oil recommended

Prepare the Urad Dal

  • Soak 1 cup of urad dal in water for at least 4 hours, or preferably overnight.
  • Grind the soaked dal into a smooth batter using a blender or food processor. Add a little water if needed to achieve a smooth, slightly thick consistency.

Adjust Batter Consistency

  • If the batter is too watery, add 1-2 tablespoons of semolina (sooji) or urad dal flour to thicken it.

Incorporate Flavorings

  • Add 1/2 cup finely chopped onion and 1 teaspoon salt (or to taste) to the batter. Mix well to combine.

Shape the Medu Vada

  • Keep a bowl of water handy. Wet your hands with water. Take a small portion of the batter (about 1-2 tablespoons) and gently shape it into a small disc or patty.
  • Use your thumb to create a small hole in the center of each vada.

Deep Fry the Medu Vada

  • Heat about 2 cups of oil in a deep-bottomed wok or pan over medium heat.
  • Carefully slide the medu vadas into the hot oil, ensuring not to overcrowd the pan.
  • Fry the vadas until they are lightly golden brown, then gently turn them over using a slotted spoon.
  • Continue frying until the vadas are golden brown and crispy on all sides. Maintain medium heat to ensure they cook through without burning.

Drain and Serve

  • Once the vadas are cooked, remove them from the oil and place them on a paper towel-lined plate to absorb any excess oil.
  • Serve the hot, crispy medu vadas immediately with sambar and coconut chutney.
