Ingredients
 

For the Batter

  • 1 cup Lentils also known as split black gram, black, split black lentils
  • 1/4 cup Rice Flour
  • 1/2 tsp Salt
  • 1 tbsp Jaggery grated or finely chopped
  • Water as needed, for adjusting batter consistency

For Frying

  • 2 Ladle medu vada ladles or similar utensil for shaping the vadas
  • 3 cup Oil for deep frying

For the Pears

  • 2 Pears ripe but firm, thinly sliced (about 4 slices per pear)

Prepare the Batter

  • Soak urad dal for at least 4 hours or overnight. Drain and grind into a smooth batter using a blender. Add rice flour, salt, and jaggery. Mix well and add water to achieve a slightly thick batter, similar to pancake batter.

Prepare the Pears

  • Wash and thinly slice the pears. Set aside.

Fry the Pear Medu Vada

  • Heat oil in a deep pan or kadai over medium-high heat. Once the oil is hot, use a medu vada ladle to scoop a small amount of batter and gently flatten it in the hot oil. Place a few pear slices onto the batter in the oil.

Deep Fry and Serve

  • Carefully deep-fry the pear vadas until golden brown and crisp, flipping halfway through. Remove and drain on paper towels.
