Ingredients
For the Kunafa Base
- 300 gm Vermicelli seviyyan, roasted
- 2-3 Tbsp Ghee melted
- 2 Tbsp Honey
For the Cheese Filling
- 150 gm Ricotta Cheese
- 50 gm Cream Cheese Spread
- 100 gm Mozzarella Cheese grated
For the Honey Syrup
- ¾ cup Sugar granulated
- 1 tsp Rose Water or orange blossom water
- ¾ cup Water
Instructions
- In a bowl, combine the roasted vermicelli, melted ghee, and honey. Toss well to ensure the vermicelli is evenly coated. Set aside.
- In a separate bowl, combine the ricotta cheese and cream cheese spread. Mix thoroughly until smooth and creamy. This creates a luscious base for the kunafa filling.
- In a large pot, combine the granulated sugar and water. Bring the mixture to a boil over medium-high heat. Once boiling, add the rose water or orange blossom water and stir. Continue to cook until the syrup reaches a one-string consistency. This indicates the perfect syrup thickness for the kunafa. Remove from heat.
- Grease a 9-inch springform pan with ghee or butter. This prevents sticking and ensures easy removal. Create an even layer of the kunafa base, about 1 inch thick, on the bottom of the prepared pan. Gently press down using your fingers or the back of a glass to compact the layer.
- Pour the cheese filling evenly over the kunafa base. Sprinkle the grated mozzarella cheese evenly over the cheese filling, ensuring it covers the entire surface.
- Add another layer of the kunafa base over the cheese and mozzarella. Gently press down to create a compact top layer. This ensures a beautiful, even kunafa.
- Preheat oven to 300°F (150°C). Bake the kunafa for 10-15 minutes, or until the top is golden brown and crispy. The edges should be lightly browned, and the cheese should be melted and bubbly.
- Remove the kunafa from the oven. While still hot, immediately pour the prepared honey syrup evenly over the top. Allow the syrup to soak in for 5-10 minutes. This creates a wonderfully moist and flavorful dessert. Garnish with chopped pistachios and rose petals (optional). Serve warm and enjoy!
