Instructions

Prepare the Chickpeas

  • Soak 1 cup of dried chickpeas in cold water for at least 8 hours or overnight. Drain well and rinse.

Make the Falafel Mixture

  • In a food processor, combine the soaked chickpeas, onion, coriander, garlic, ginger, cumin, chili powder, baking powder, salt, and corn flour. Pulse until a coarse mixture forms, leaving some texture.

Shape the Falafel

  • Form the mixture into small patties, about 1-inch in diameter.

Fry the Falafel

  • Heat vegetable oil in a deep saucepan or wok over medium-high heat. Carefully add the falafel patties, ensuring not to overcrowd the pan. Fry for 2-3 minutes per side, until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Serve

  • Serve the falafel hot with your favorite dipping sauces, such as tahini or hummus, and a fresh salad.

Recipe Notes

Expert Tips for Perfect Falafel

  • Soaking is Key: Soaking the chickpeas ensures a tender and flavorful falafel. Don't skip this step!
  • Don't Over-Process: Pulse the mixture, rather than pureeing it completely, to retain some texture in the falafel.
  • Control the Heat: Fry at medium-high heat to achieve a crispy exterior without burning the inside. Adjust the heat as needed.
  • Rest Before Serving: Allow the falafel to rest for a few minutes after frying to ensure they are fully cooked and crispy.
