Instructions

Prepare the Chickpea Mixture

  • Grind the boiled chickpeas, green chilies, garlic, and fresh herbs (parsley and cilantro) into a coarse paste using a food processor. Do not over-process; some texture is desirable.

Combine Dry Ingredients

  • In a large bowl, combine the ground coriander, ground cumin, red chili powder, baking powder, and salt. Add this dry mixture to the chickpea paste.

Mix and Rest

  • Gently mix the wet and dry ingredients until thoroughly combined. Add corn flour and mix well. The mixture should be slightly sticky but hold its shape. Let it rest for at least 15-30 minutes to allow the flavors to meld.

Shape and Fry

  • Form the mixture into small, flattened patties (about 1-inch thick). Heat vegetable oil in a large skillet or frying pan over medium heat.

Cook the Falafel

  • Fry the falafel patties in batches, ensuring not to overcrowd the pan. Cook for 2-3 minutes per side, or until golden brown and crispy. Flip carefully once during cooking.

Serve and Enjoy

  • Remove the falafel from the pan and drain on paper towels. Serve immediately with your favorite dips and sides. Enjoy!
