Ingredients
 

For the Bread Baskets

  • 6 slices Bread white bread or whole wheat bread; use a sturdy loaf
  • 2 tbsp Butter melted
  • 1 tsp Oregano dried
  • 0.5 tsp Pepper Flakes red
  • 0.5 tsp Pepper black, freshly ground

Prepare the Bread Baskets

  • Roll out bread slices thinly using a rolling pin.
  • Cut out circles using a large cookie cutter or the rim of a bowl, slightly larger than a muffin cup.
  • In a small bowl, combine melted butter, oregano, red pepper flakes, and black pepper. Set aside.

Prepare the Filling

  • In a large bowl, combine chopped red bell pepper, yellow bell pepper, green bell pepper, broccoli, sweet corn, and onion.
  • Add shredded mozzarella cheese, shredded processed cheese, oregano, black pepper, and salt. Mix well.

Assemble and Bake

  • Brush each bread circle with the butter mixture.
  • Press the bread circles into a muffin tin to create cups.
  • Fill each bread cup with the vegetable and cheese mixture.
  • Bake in a preheated oven at 350°F (180°C) for 8-10 minutes, or until the bread is golden brown and the cheese is melted and bubbly.

Serve

  • Remove from the muffin tin and let cool slightly.
  • Garnish with extra red pepper flakes and oregano.
  • Serve hot with tomato ketchup.
