Ingredients
For the Chaat Baskets
- 1 cup All-Purpose Flour also known as maida
- 1 tbsp Semolina also known as suji
- 1 tbsp Vegetable Oil
- 1/2 tsp Carom Seeds ajwain
- 1/2 tsp Cumin Seeds
- 1 tsp Salt or to taste
- 1/2 - 3/4 cup Water add gradually until a stiff dough forms
- 2 cup Vegetable Oil for deep frying
For Serving (Optional)
- Your Favorite Chaat Toppings examples: chutneys, chopped onions, cilantro, sev, yogurt
Instructions
Prepare the Dough
- Combine all-purpose flour, semolina, vegetable oil, carom seeds, cumin seeds, and salt in a large bowl. Mix well.
- Gradually add water, mixing until a stiff, workable dough forms. Knead for 5-7 minutes until smooth and elastic.
- Let the dough rest for at least 30 minutes, covered with a damp cloth.
Shape the Baskets
- Divide the dough into 8 equal portions.
- Roll each portion into a thin circle, about 6 inches in diameter.
- Cut each circle into thin strips, approximately 1/2 inch wide.
- Invert a small, round steel bowl (about 4-inch diameter). Arrange the strips of dough, both horizontally and vertically, on the bowl to create a basket shape. Secure the ends of the strips by lightly pressing them together, using a little water to seal if needed.
Fry the Baskets
- Heat vegetable oil in a deep kadai or pot over medium heat. Once the oil is hot (a small piece of dough should sizzle immediately), carefully place the baskets in the oil, ensuring they are fully submerged but not overcrowded.
- Fry the baskets on medium-low heat, turning occasionally, until they are golden brown and crispy. This will take about 3-4 minutes per basket.
- Remove the baskets from the oil and place them on a paper towel-lined plate to drain excess oil.
- Once cool enough to handle, gently remove the baskets from the steel bowls.
