Ingredients
For the Potato Filling
- 1 medium Potato boiled and mashed
- 1 tbsp Oil for sautéing
- 2 tbsp Bell Peppers finely chopped
- 1/2 tsp Chili Powder
- 1 tsp Cumin roasted and ground
- 1 tsp Chili Paste adjust to taste, green
- 1 tbsp Cheese grated cheddar or mozzarella
- 1 tsp Lemon Juice
- 1 1/2 tsp Salt or to taste
For the Bread Pakoda
- 6 slices Bread crusts removed, white bread
- 2 Eggs
- 1/4 cup Corn Flour
- 1/2 cup Water
- Oil for deep frying
Instructions
Prepare the Potato Filling
- Heat oil in a pan. Add capsicum and sauté for a minute. Add chili powder, cumin, green chili paste, and mashed potatoes. Mix well. Stir in lemon juice, cheese, and salt. Cook until heated through. Remove from heat.
Prepare the Bread
- Trim the crusts from the bread slices. Using a rolling pin, gently flatten each slice.
Assemble the Pakoda
- Spread a spoonful of the potato filling onto each bread slice. Fold the bread to enclose the filling, pressing gently to seal.
Make the Batter
- In a bowl, whisk together eggs, cornflour, water and salt until smooth.
Fry the Pakoda
