- 1/4 cup Corn Flour
- 1 tsp Salt or to taste
- 1 tsp Chili Powder kashmiri, red
- 1/2 tsp Pepper black, ground
- 1 tbsp Soy Sauce
- Water as needed, to make a smooth batter
- Vegetable Oil as needed, for deep frying
For the Manchurian Sauce
- 2 tbsp Vegetable Oil
- 1/2 medium Onion finely chopped
- 1 inch Ginger finely chopped
- 3 cloves Garlic finely chopped
- 1/2 medium Bell Peppers capsicum, cubed
- 1/4 cup Tomato Ketchup or tomato puree
- 1 tsp Chili Sauce optional
- 1.5 tsp Salt or to taste
- 2 tsp Vinegar white
- 2 tsp Soy Sauce
- 1 stalk Scallions finely chopped, for garnish, spring onions
Instructions
Prepare the Idli Batter
- In a large bowl, whisk together all-purpose flour, cornflour, salt, Kashmiri red chili powder, and black pepper. Gradually add water, mixing until a smooth, pourable batter forms.
Fry the Idlis
- Dip each mini idli into the batter, ensuring it's fully coated. Deep-fry the idlis in hot oil until golden brown and crispy, flipping halfway through. Remove and drain on paper towels to absorb excess oil.
Make the Manchurian Sauce
- Heat oil in a wok or large pan. Add finely chopped onions and sauté until softened. Add minced ginger and garlic, sauté for another minute until fragrant.
- Add cubed bell peppers and sauté until slightly tender. Stir in tomato ketchup, chili sauce (optional), salt, vinegar, and soy sauce. Cook for a minute, allowing the sauce to thicken slightly.
Combine and Serve
- Add the fried idlis to the sauce and gently toss to coat evenly. Garnish with finely chopped scallions. Serve hot and enjoy your delicious Crispy Idli Manchurian!
Recipe Notes
Expert Tips for Perfect Idli Manchurian
- For extra crispy idlis, let the batter rest for 15-20 minutes before frying.
- Adjust the amount of chili powder according to your spice preference. Kashmiri chili powder adds color without excessive heat.
- Don't overcrowd the pan while frying the idlis. Work in batches to ensure even browning and crispiness.
- If you prefer a spicier Manchurian sauce, add a few finely chopped green chilies along with the ginger and garlic.
