Ingredients
Idli Preparation (If not using pre-made)
For the Idli Manchurian Balls
- 1/2 cup All-Purpose Flour maida
- 1/4 cup Corn Flour
- 1 tbsp Ginger-Garlic Paste
- 1/2 tsp Salt adjust to taste
- 1/2 tsp Chili Powder adjust to taste, red
- 1/4 tsp Pepper Powder black
- 1 tsp Soy Sauce
- 2 cup Vegetable Oil for deep frying
For the Manchurian Sauce
- 1 medium Onion finely chopped
- 1 tbsp Ginger-Garlic Paste
- 1-2 Chili finely chopped, green, or substitute with 1/2 tsp chili sauce
- 2 tbsp Tomato Ketchup
- 1/2 tsp Salt adjust to taste
- 1/4 tsp Pepper Powder black
- 1/4 cup Spring Onions finely chopped, for garnish
- 1 tbsp Corn Flour mixed with 2 tbsp water to form a slurry
- 2 tbsp Soy Sauce
- 2 tbsp Vegetable Oil for sautéing
- 8-10 Idlis pre-made or prepared as above
Instructions
Prepare the Idli Batter (if making from scratch)
- Soak urad dal and idli rice separately for at least 4-6 hours. Grind into a smooth batter, adding water as needed. Ferment the batter for 8-12 hours in a warm place.
- Steam idlis as per your usual method.
Prepare the Idli Manchurian Coating
- In a bowl, combine all-purpose flour, cornstarch, ginger-garlic paste, salt, red chili powder, black pepper, and soy sauce. Add water gradually to make a thick batter.
- Cut the steamed idlis into bite-sized cubes.
- Dip each idli cube into the prepared batter, ensuring it's fully coated.
- Deep fry the coated idli cubes in hot oil until they turn golden brown and crispy. Remove and set aside.
Prepare the Manchurian Sauce
- Heat oil in a pan or wok. Add finely chopped onions and sauté until translucent. Add ginger-garlic paste and green chilies, sauté for another minute.
- Stir in tomato ketchup, soy sauce, salt, and black pepper. Saute for 2-3 minutes.
- Pour in the cornflour slurry and stir continuously until the sauce thickens. Add the fried idli cubes and toss gently to coat everything evenly.
- Garnish with chopped spring onions.
