Ingredients
Vegetables
- 2 Potatoes medium sized, peeled and cut into 1/2-inch thick sticks
- 1 Bitter Gourd karela, about 1 medium, deseeded and cut into 1/2-inch thick sticks
- 1 Bell Peppers capsicum, any color, cut into 1/2-inch thick sticks
- 1 Carrot peeled and cut into 1/2-inch thick sticks
Dry Ingredients
- 1/2 cup Rice Flour
- 1/2 cup All-Purpose Flour maida
- 2 tsp Corn Flour
Sauce Ingredients
- 2 tbsp Soy Sauce
- 1 tbsp Chili Sauce
- 1 tbsp Sesame Seeds
- 1 tsp Sugar
- 1 tsp Honey
- Salt to taste
Aromatics & Other
- 1 Onion sliced
- 2 Spring Onions diced, for garnish
- 4 Chili Peppers slit lengthwise
- 1 tbsp Garlic minced
- 1 tbsp Ginger minced
- 1 tsp Pepper black, ground
- 3 tbsp Vegetable Oil for frying
Instructions
Prepare the Vegetables
- Dice all vegetables into long, 1/2-inch thick sticks. For the bitter gourd, cut into sticks, toss with salt, let sit for 2 hours, then rinse and boil for 15 minutes until slightly tender. Boil the remaining vegetables until semi-soft, adding salt to the water.
Coat and Fry the Vegetables
- Drain the vegetables well. In a bowl, mix together 1/2 cup all-purpose flour and 1/2 cup rice flour. Dip the vegetables into the batter, ensuring they are evenly coated. Deep fry in hot oil until golden brown and crispy. Remove and set aside.
Make the Honey Chili Sauce
- Heat 2 tbsp vegetable oil in a wok or large pan over medium-high heat. Add the chili peppers, minced garlic, and ginger; sauté for a minute until fragrant. Add the sliced onions and sauté until caramelized (light brown).
- Add soy sauce, chili sauce, black pepper, sesame seeds, salt, and sugar. Stir in 1/2 cup of water and bring to a simmer.
- Mix 2 tsp cornstarch with 1/4 cup cold water to create a slurry. Slowly add the slurry to the simmering sauce, stirring constantly until the sauce thickens to your desired consistency.
Combine and Serve
- Add the fried vegetables and honey to the sauce. Toss gently to coat everything evenly. Garnish with diced spring onions and serve immediately.
