Ingredients
 

For the Green Beans

  • 10 ounces Beans green, trimmed and cut into 3-inch lengths

For the Chicken

  • 1 cup Chicken cooked and shredded (rotisserie chicken works well), shredded

For the Batter

  • 1 tbsp All-Purpose Flour also known as maida
  • 1/4 tsp Corn Flour optional; can be mixed with 1 tablespoon of water to create a slurry

Prepare the Green Beans

  • Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the green beans and deep fry until tender-crisp. Remove and set aside on a plate lined with paper towels.

Prepare the Chicken

  • Toss the shredded chicken with the all-purpose flour. Heat the remaining 1 tablespoon of oil in a clean wok or skillet. Deep fry the chicken until golden brown and heated through. Remove and set aside on a plate lined with paper towels.

Stir-Fry the Aromatics

  • Add the minced ginger and garlic to the wok and sauté for 30 seconds until fragrant.

Add Vegetables and Seasonings

  • Add the sliced scallions and sauté for another 30 seconds. Add the fried green beans and stir to combine.

Simmer and Thicken

  • Stir in the soy sauce, salt, black pepper, and sugar. Mix well. If using cornstarch slurry, add it now and stir until the sauce thickens slightly. If skipping cornstarch, add 2-3 tablespoons of water to achieve desired consistency.

Combine and Serve

  • Add the fried chicken to the wok and stir gently to combine everything. Cook for about 1 minute over low heat, allowing flavors to meld.

Serve

  • Serve immediately. Garnish with extra scallions if desired. Enjoy with your favorite dipping sauce!
