Ingredients
For the Green Beans
- 10 ounces Beans green, trimmed and cut into 3-inch lengths
For the Chicken
- 1 cup Chicken cooked and shredded (rotisserie chicken works well), shredded
For the Batter
- 1 tbsp All-Purpose Flour also known as maida
- 1/4 tsp Corn Flour optional; can be mixed with 1 tablespoon of water to create a slurry
Instructions
Prepare the Green Beans
- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the green beans and deep fry until tender-crisp. Remove and set aside on a plate lined with paper towels.
Prepare the Chicken
- Toss the shredded chicken with the all-purpose flour. Heat the remaining 1 tablespoon of oil in a clean wok or skillet. Deep fry the chicken until golden brown and heated through. Remove and set aside on a plate lined with paper towels.
Stir-Fry the Aromatics
- Add the minced ginger and garlic to the wok and sauté for 30 seconds until fragrant.
Add Vegetables and Seasonings
- Add the sliced scallions and sauté for another 30 seconds. Add the fried green beans and stir to combine.
Simmer and Thicken
- Stir in the soy sauce, salt, black pepper, and sugar. Mix well. If using cornstarch slurry, add it now and stir until the sauce thickens slightly. If skipping cornstarch, add 2-3 tablespoons of water to achieve desired consistency.
Combine and Serve
- Add the fried chicken to the wok and stir gently to combine everything. Cook for about 1 minute over low heat, allowing flavors to meld.
Serve
- Serve immediately. Garnish with extra scallions if desired. Enjoy with your favorite dipping sauce!
