  • 200 gm Long Beans green, trimmed and cut into 3-inch pieces

Prepare the Green Beans

  • Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the green beans and stir-fry until crisp-tender, about 3-5 minutes. Remove from the wok and set aside.

Prepare the Chicken

  • Toss the chicken pieces in the all-purpose flour, ensuring they are evenly coated. Heat the remaining oil in the wok over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the wok and set aside on a plate lined with paper towels to absorb excess oil.

Make the Sauce

  • Add the minced ginger and garlic to the wok and sauté for 30 seconds until fragrant. Add the sliced scallions and stir-fry for another 30 seconds.

Combine and Finish

  • Add the cooked green beans to the wok and stir-fry for 1 minute. Stir in the soy sauce, salt, pepper, and sugar. Mix well.

Thicken the Sauce

  • Slowly pour in the cornstarch slurry (cornstarch mixed with water) and stir continuously until the sauce thickens to your desired consistency.
