Ingredients
For the Chicken
- 250 gm Chicken Breast boneless, cut into 1-inch pieces
- 1 tbsp All-Purpose Flour
For the Green Beans
- 200 gm Long Beans green, trimmed and cut into 3-inch pieces
For the Sauce
- 1 tsp Corn Flour mixed with 1 tbsp water
- 1 tbsp Ginger minced
- 5 clove Garlic minced
- 2 Scallions thinly sliced, white and light green parts
- 1 tbsp Soy Sauce
- 1.5 tsp Salt or to taste
- 1 tsp Pepper black, freshly ground
- 1 tsp Sugar
- 2 tbsp Vegetable Oil for frying
Instructions
Prepare the Green Beans
- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the green beans and stir-fry until crisp-tender, about 3-5 minutes. Remove from the wok and set aside.
Prepare the Chicken
- Toss the chicken pieces in the all-purpose flour, ensuring they are evenly coated. Heat the remaining oil in the wok over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the wok and set aside on a plate lined with paper towels to absorb excess oil.
Make the Sauce
- Add the minced ginger and garlic to the wok and sauté for 30 seconds until fragrant. Add the sliced scallions and stir-fry for another 30 seconds.
Combine and Finish
- Add the cooked green beans to the wok and stir-fry for 1 minute. Stir in the soy sauce, salt, pepper, and sugar. Mix well.
Thicken the Sauce
- Slowly pour in the cornstarch slurry (cornstarch mixed with water) and stir continuously until the sauce thickens to your desired consistency.
Add Chicken and Serve
- Add the cooked chicken to the wok and toss gently to coat everything in the sauce. Stir-fry for another minute on low heat. Remove from heat and serve hot. Garnish with extra scallions if desired.
Recipe Notes
Expert Tips for the Best Crispy Chicken and Green Beans:
- For extra crispy chicken, pat the chicken pieces dry with paper towels before coating them in flour.
- Don't overcrowd the wok when frying the chicken and green beans; work in batches if necessary to ensure even cooking and browning.
- Adjust the amount of sugar and soy sauce to your liking. For a spicier dish, add a pinch of red pepper flakes.
- Serve immediately for the best texture and flavor. Consider serving with steamed rice or noodles for a complete meal.
