Ingredients
For the Chicken Marinade
- 500 gm Chicken Breast boneless, cut into 1-inch strips
- 100 gm Yogurt also known as curd
- 1.5 tsp Salt or to taste
- 1 tbsp Ginger Garlic Paste
- 1 tbsp Chili Powder red
For the Chicken Batter
- 5 tbsp Corn Flour
- 1 Egg
- 2 tbsp Chicken Stock
For Deep Frying
- 500 ml Vegetable Oil
For the Sauce
- 3 tbsp Vegetable Oil
- 1 tbsp Ginger minced
- 9 clove Garlic minced
- 1 medium Bell Peppers chopped; you can also add red and yellow bell peppers, green
- 1 tbsp Chili Garlic Paste
- 3 tbsp Tomato Ketchup
- 2 tbsp Soy Sauce
- 1 bunch Onions chopped, green
- 1 tbsp Garlic chopped
- 1/2 cup Chicken Stock
- 1/2 tsp Salt to taste
- 7 Cashews cubed, roasted
Instructions
Marinate the Chicken
- Marinate the chicken strips with yogurt, salt, ginger-garlic paste, and red chili powder. Let it marinate for at least 1 hour.
Prepare the Chicken Batter
- In a bowl, whisk together the cornflour, egg, and a little chicken stock to create a smooth batter. Add the marinated chicken strips to the batter, ensuring each strip is well coated.
Deep Fry the Chicken
- Heat the vegetable oil in a wok or deep fryer to 350°F (175°C). Carefully add the battered chicken strips and deep fry until golden brown and crispy. Remove and drain on paper towels.
Prepare the Sauce
- Heat the vegetable oil in a clean wok or large skillet over medium heat. Add the minced ginger and garlic and sauté until fragrant (about 30 seconds). Add the chopped bell pepper and chili garlic paste; stir-fry for 1-2 minutes.
Combine and Simmer
- Stir in the tomato ketchup and soy sauce. Add the chopped green onions and garlic. Toss well. Pour in the remaining chicken stock and salt, then add the deep-fried chicken strips. Toss everything together until well coated and heated through.
