Instructions

Marinate the Chicken

  • Marinate the chicken strips with yogurt, salt, ginger-garlic paste, and red chili powder. Let it marinate for at least 1 hour.

Prepare the Chicken Batter

  • In a bowl, whisk together the cornflour, egg, and a little chicken stock to create a smooth batter. Add the marinated chicken strips to the batter, ensuring each strip is well coated.

Deep Fry the Chicken

  • Heat the vegetable oil in a wok or deep fryer to 350°F (175°C). Carefully add the battered chicken strips and deep fry until golden brown and crispy. Remove and drain on paper towels.

Prepare the Sauce

  • Heat the vegetable oil in a clean wok or large skillet over medium heat. Add the minced ginger and garlic and sauté until fragrant (about 30 seconds). Add the chopped bell pepper and chili garlic paste; stir-fry for 1-2 minutes.

Combine and Simmer

  • Stir in the tomato ketchup and soy sauce. Add the chopped green onions and garlic. Toss well. Pour in the remaining chicken stock and salt, then add the deep-fried chicken strips. Toss everything together until well coated and heated through.

Garnish and Serve

  • Garnish with extra chopped green onions and roasted cashews. Serve immediately and enjoy your delicious Dragon Chicken Stir-Fry!

Recipe Notes

Expert Tips for Dragon Chicken Success

  • For extra crispy chicken, ensure the oil is at the correct temperature before frying. Use a thermometer to maintain the optimal heat.
  • Don't overcrowd the wok when stir-frying; work in batches to ensure even cooking and browning of the chicken and vegetables.
  • If you prefer a less spicy dish, reduce the amount of chili powder or chili garlic paste.
  • Feel free to experiment with other vegetables, such as broccoli, carrots, or mushrooms, to add more color and texture to your stir-fry.
