For the Filling

  • 2 Potato boiled and grated, medium-sized
  • 1/2 medium Onion finely chopped
  • 2 Chili finely chopped (adjust to your spice preference), green
  • 2 tbsp Coriander finely chopped
  • 1 tsp Mango Powder dry mango powder
  • 1/2 tsp Salt
  • 1/2 tsp Chili Powder (adjust to taste), red
  • 200 gm Cottage Cheese cut into long, indian cottage cheese, thin slices

For the Pakoras

  • 8 Bread slices of, brown bread recommended
  • 4 tbsp Chutney (your favorite recipe or store-bought), green

Instructions
 

Prepare the Filling

  • Combine grated potatoes, chopped onion, green chilies, coriander, amchur powder, salt, and red chili powder in a bowl. Mix well.

Assemble the Pakoras

  • Spread a thin layer of green chutney on one slice of bread. Top with a spoonful of the potato mixture and a thin slice of paneer.
  • Place another slice of bread on top, pressing gently to seal the filling. Repeat with remaining bread slices.

Make the Batter

  • In a separate bowl, whisk together gram flour, ajwain, salt, and enough water to create a smooth, pourable batter.

Fry the Pakoras

  • Heat oil in a deep pan or kadai over medium heat. Dip each bread pakora into the batter, ensuring it's fully coated.
  • Fry until golden brown and crispy on both sides. Remove and place on paper towels to drain excess oil.

Serve

  • Cut each pakora into halves or quarters and serve hot with your favorite chutney and a cup of chai.
