Ingredients
Batter
- 500 ml Coconut Milk
- 375 gm Rice Flour
- 125 gm Sugar brown
Other
- 1 tsp Vegetable Oil for brushing
Instructions
- In a mixing bowl, combine the coconut milk, rice flour, and brown sugar.
- Whisk the ingredients together until the batter is completely smooth and free of lumps.
- Heat a khanom khrok pan (or a poffertjes pan if you have one) over medium heat. This specialized pan creates the signature crispy wells in the pancakes.
- Lightly brush each mold in the pan with vegetable oil. This prevents the batter from sticking and ensures easy removal.
- Once the pan is hot (test by dropping a small amount of batter – it should sizzle gently), pour the batter into each mold, filling them about two-thirds full.
- Close the lid of the pan (if it has one) and cook for 4-5 minutes. The pancakes are ready when the edges are golden brown and crispy, and the center is cooked through.
- Carefully remove the khanom khrok from the pan using a small oiled spoon or a toothpick. Serve immediately while they are hot and crispy.
Recipe Notes
Expert Tips
- For a richer flavor, toast the sesame seeds before adding them to the dish. This enhances their nutty aroma and adds a pleasant crunch.
- If using fresh lychees, ensure they are ripe and fragrant. Canned lychees can be used as a convenient alternative, but drain them well before adding.
- Adjust the sweetness according to your preference. If you prefer a less sweet dessert, reduce the amount of sugar or sweetener used.
Storage Instructions
- Store leftover dessert in an airtight container in the refrigerator for up to 3 days.
